Today I want to share a dessert recipe that is a favorite for my family, particularly during the holidays. Although sometimes I can be persuaded to make it at other times during the year.
Crispy Holiday Log
1 package (10 oz.) large marshmallows
1/4 cup butter
1/4 cup peanut butter
6 cups crisp rice cereal
1 cup semisweet chocolate chips
1/2 cup butterscotch chips
Line cookie sheet (15″ x 10″) with waxed paper. Grease wax paper and set aside.
On low heat, stir marshmallows, butter, and peanut butter until everything melts and blends together. Stir in cereal until well coated. Spread mixture onto cookie sheet in one layer.
Combine chips into small pot and stir on low heat until chips melt completely. Spread chip mixture over cereal layer to within 1″ of edges.
Roll up jelly-roll style, starting with the long side and peeling wax paper away while rolling. Place seam side down on serving plate. Refrigerate for 1 hour or until set. Cut into slices.
